Ingredients
2 eggplants
1 large onion
10 cherry tomatoes or 2 large tomatoes
Salt
Method of Preparation
Chop all vegetables and layer them on a cooking tray:
1st layer : chopped onion
2nd layer: eggplant, add salt and oregano
3rd layer: chopped onion
4th layer tomatoes, oregano and salt
Cover with Aluminium foil and place in the preheated oven at 180 degrees for 40 minutes
